Chocolate Panna Cotta

(Serves 8)

2 Sheets of Gelatin or 2 packages of powdered gelatin

2 cups heavy cream

1 whole vanilla bean

2 cups half and half

2 tsp honey

1/3-cup. Dark Chocolate 60%

 1/3-cup Sugar

 

Re-constitute the gelatin and mix with all the other ingredients in a saucepan cook over a low heat.  Pour into chilled formed glasses or bowls and allow chilling overnight.

Garnish with Maple Crème Anglaise & Tart Cherry Reduction
