Mushroom Fromage

Fromage:

Add all of the following ingredients together and make paste (not too thin, not too thick)

 

1 Cup Shredded Parmesan Cheese

1 Cup Shredded Swiss Cheese

1/3 Cup Mayonnaise

¼ Cup Sour Cream

3 Egg Yolks

2-3 Tablespoons of fresh herb- dill- parsley

¼ teaspoon - Cayenne Pepper

½ teaspoon Ground Mustard

¼ Cup Breadcrumbs

Set Fromage aside

 

Method for Blanching Mushrooms:

Stem 20-30 Large Mushrooms

 

Combine the following list of ingredients:

½ Cup Chablis

¼ Cup Lemon Juice

1 Teaspoon Salt

¼ Teaspoon White Pepper

 

Get 2 Tablespoons cooking oil smoking hot in heavy bottomed pot

Add mushrooms to cooking oil

Quickly add wine and lemon mixture to mushrooms and cover

Steam until mushrooms become soft, let cool.

 

Stuff mushrooms with fromage

Bake at 375 for 15-20 minutes

Fromage can also be used for stuffing chicken breast or to top fish and serve with lemon butter.
