(Serves up to 4 people)
24 Cheese Filled Ravioli
1/8 cup Olive or Canola Oil
10 Grape Tomatoes Halved
4 Artichokes in Brine Quartered
1 tablespoon of Garlic
1 tablespoon Lemon Juice
4 oz White Wine
1 tablespoon Arugula Pesto
4 oz Heavy Cream
4 tablespoons Parmigiano Cheese
Salt & Pepper to taste
Bring 6 cups of water to a boil
Add Ravioli
Heat Pan and add oil
Add grape tomatoes, artichoke hearts and garlic
Reduce heat and add white wine and lemon then simmer so the alcohol burns off
Add heavy cream
Simmer to reduce
Add salt and pepper to taste
Strain and add Ravioli to the pan
Toss with Arugula Pesto and finish with Parmigiano Cheese
Serve immediately and enjoy the experience!!
