Sweet Potato Polenta

Sweet Potato Polenta

1 small – medium sweet potato

½ cup corn meal

½ cup marscapone cheese

1 small jalepeno pepper roasted

¼ cup roasted red peppers diced

salt and pepper to taste

¼ cup red onion diced

1 cup vegetable broth

 

Roast sweet potato in oven until soft. Peel and cut into small pieces.

Boil vegetable broth and slowly add cornmeal until thick. Add remaining vegetables and mix well. Add marscapone cheese. Pour into small loaf pan and chill
